Red Pepper Falafel Cakes

Protein-packed falafels are easy to make at home. Stuff them in a pita pocket for a quick lunch.

Ingredients

  • 1 540-mL can chickpeas , drained and rinsed
  • 1/3 cup fine bulgur
  • 4 garlic cloves
  • 1 small onion
  • 1 egg
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp ground coriander
  • 1/4 tsp salt
  • 2/3 cup all-purpose flour
  • 1/3 cup roasted red sweet pepper , finely chopped
  • 4 tsp canola oil
  • 4 pitas , halved
